If you know me, you know that I’m a girl on the go. Spending lots of time in the kitchen is not something I look forward to (although, I’m trying to be better.) Here’s a quick, easy and delicious lunch salad you can throw together in less than 15 minutes.
Massaged Kale Chicken Caesar Salad with Homemade Croutons
Ingredients:
- Kale
- Lemon juice
- Chia seeds
- Heirloom cherry tomatoes
- Grilled chicken
- Caesar dressing
- Homemade croutons
- Parmesan, romano, asiago
Here are some tips for preparing:
- Kale: chop up your kale and toss it in a bowl with some lemon juice. Allow it to soak for a minute and then use your hands to massage the kale. Literally, like a spa day. Kale is a stubborn green, but the lemon helps break down the cellulose in the kale, along with the massage, so it becomes more tender and less bitter.
- Caesar dressing: look for something with minimal ingredients, no added sugars and definitely no high fructose corn syrup.
- Homemade croutons: you can get fancy with it and buy a speciality bread, but like I said, I g2g so I just used a slice of sprouted wheat bread 🤷🏽. Cut it into cubes and toss it in a skillet with a healthy oil. Keep the heat on medium to crisp the bread and not burn it. Sprinkle some herbs on top. Boom done.
