Guys, I love beets. It’s sick.
I went through a good week stretch where I had beets at most lunches and dinners.
Why I love them?
(beyond being the vegetable of choice on The Office – literally all roads lead to Scranton)
- Contain a little bit of basically every nutrient and mineral under the sun
- Keeps blood pressure in check
- Has nitrates that may enhance athletic performance
- Fights inflammation
- Improves digestion
- Supports brain health
- Has anti-cancer properties.
Salad ingredients include:
- Arugula
- Avocado
- Pistachios
- Goat cheese
- EVOO
- Balsamic drizzle
- Beets (duh).
